The history

India's 7,500 km of coastline gave the world its pepper and took in the Arab dhow, the Chinese fishing net and the Portuguese caravel. Malabar's Moplah biryanis, Mangalore's ghee roast and Konkan's kokum curries all begin at a fish market before dawn.

Coconut in three forms, tamarind or kokum for sourness, and a short cooking time that respects fresh seafood. Kashmiri chilli for colour without violence; curry leaf and ginger for lift.

How this region cooks
