Where it comes from

Assam's summer answer to heavy food: fish in a thin, sour broth soured with elephant apple, tomato or lemon. Barely any spice, almost no oil, and eaten with mounds of rice.

Method

    Fry the fish

    Rub with turmeric and salt, shallow fry in mustard oil until light gold.

    Start the broth

    Crackle nigella, add tomato and cook until it collapses.

    Sour it

    Add water and the souring agent, boil hard for five minutes.

    Return the fish

    Slide the fish back in, simmer briefly, finish with coriander.

Cook's notes

  • The broth should be thin — resist thickening it.
  • Any sour fruit works: outenga, tomato, lemon, even raw mango.
