Where it comes from
Assam's summer answer to heavy food: fish in a thin, sour broth soured with elephant apple, tomato or lemon. Barely any spice, almost no oil, and eaten with mounds of rice.
Method

Fry the fish
10:00Rub with turmeric and salt, shallow fry in mustard oil until light gold.

Start the broth
08:00Crackle nigella, add tomato and cook until it collapses.

Sour it
06:00Add water and the souring agent, boil hard for five minutes.

Return the fish
05:00Slide the fish back in, simmer briefly, finish with coriander.
Cook's notes
- The broth should be thin — resist thickening it.
- Any sour fruit works: outenga, tomato, lemon, even raw mango.
