Where it comes from

A festival dal, cooked for Durga Puja and served with luchi. Its gentle sweetness — jaggery, raisin, coconut — is deliberate: Bengali meal grammar wants a sweet note before the sour chutney.

Method

    Cook the dal

    Boil chana dal with turmeric until soft but still holding shape.

    Fry the coconut

    Brown coconut pieces in ghee and set aside.

    Tadka

    Crackle panch phoron, bay leaf and cardamom in the same ghee.

    Bring together

    Add the dal, jaggery, raisins and coconut. Simmer until glossy and slightly thick.

Cook's notes

  • The dal grains should stay whole — this is not a mashed dal.
  • Serve with luchi or plain rice; both are traditional.
