Where it comes from
A festival dal, cooked for Durga Puja and served with luchi. Its gentle sweetness — jaggery, raisin, coconut — is deliberate: Bengali meal grammar wants a sweet note before the sour chutney.
Method

Cook the dal
25:00Boil chana dal with turmeric until soft but still holding shape.

Fry the coconut
05:00Brown coconut pieces in ghee and set aside.

Tadka
02:00Crackle panch phoron, bay leaf and cardamom in the same ghee.

Bring together
12:00Add the dal, jaggery, raisins and coconut. Simmer until glossy and slightly thick.
Cook's notes
- The dal grains should stay whole — this is not a mashed dal.
- Serve with luchi or plain rice; both are traditional.
