Where it comes from

Monsoon corn grated on a coarse plate and cooked in milk until it turns creamy without a drop of cream. Sold on Indore's Sarafa night market from carts that only open after the jewellers close.

Method

    Grate the corn

    Use the coarse side of the grater over the cob's length.

    Crackle mustard seeds and asafoetida in ghee with chilli.

    Fry the corn

    Add grated corn and turmeric, fry until it stops smelling raw.

    Milk it down

    Add milk and cook, stirring, until thick and creamy.

Cook's notes

  • Tender corn only — mature corn stays starchy.
  • Squeeze lime over at the table; it lifts the whole thing.
